Matthew has a wide-range of commercial bakery and home bakehouse experience and awards. These include operating his own home-based micro-bakery, managing a production section for a major wholesale bakery and new product design and implementation at a large wholesale/retail bakery. 

Areas of interest and speciality are sourdough and yeast artisan breads.*
